Throughout Japan, there are local specialties deeply rooted in the respective regions called "Gotochi Food". Many people visit such regions to enjoy delicious dishes featuring local ingredients.

In many cases, the same kind of food may differ in taste and how it is eaten. A good example of such is Ramen. Depending on the region, the thickness and shape of the noodles as well as the color and flavor of the broth may be completely different.
Seasonings such as soy sauce and sauce do not taste the same everywhere you do because of the different preferences of flavor according to respective parts of the country. Moreover, some of the regions have their own unique seasonings.
Cattle, pigs, and chickens raised with utmost care are sold as expensive locally-bred brand meat.

There also are Sake that can only be savored in the respective regions and fruits that can be found no where else but in that certain area.
Meanwhile, some of the local specialties have rapidly become so popular ever since they were first introduced in the past dozen years or so that their names are recognized by the majority of the Japanese.
By tasting different local specialties, you will certainly be surprised at how many varieties there are. It would be a great idea to enjoy all the tastes each region has to offer.

This was invented after the war, when a cook forgot to order whole chicken for his "Tarzan Fried Chicken". All that was left were the wings, which at that time were only used for making soup stock. He used the lot of wings, prepared it like his deep-fried chicken kara-age, with a special sauce, pepper, salt and sesame seed sprinkeld on top ... and started a hit in his small shop. He is now 80 years (in 2010) and the small restaurant still a favorite spot of many.

The B-class-food boom reveals true Japanese cuisine

Two weeks ago, an advisory panel to the Ministry of Agriculture, Forestry and Fisheries recommended it apply to the United Nations Educational, Scientific and Cultural Organization for recognition of Japanese cuisine kaiseki ryōri, as an intangible cultural asset.

The panel might be better off taking a hint from the B-kyū (B-class) Gourmet movement, whose annual orgy of down-home gastronomy, the B1 Gold Grand Prix, was held last weekend in Himeji, Hyogo Prefecture. A record half-million people attended the festival to sample original concoctions from 63 localities and select the dish they liked best, which this year was Hiruzen yakisoba, stir-fry noodles with chicken and cabbage from the town of Miniwa in Okayama Prefecture. The winner won a golden trophy in the shape of a pair of chopsticks.

But what Maniwa mainly won is the kind of media exposure that amounts to billions of yen if translated into advertising terms. The Grand Prix was not only covered by all the major news shows, including NHK's, but many of the dishes that placed in the Top 10 were highlighted in depth; meaning film crews were dispatched to the places where these dishes originated in order to produce tokushū (special reports) about the food and the people who make it.



What's that worth? Fujinomiya, the town in Shizuoka Prefecture that has won the Grand Prix twice for its own style of yakisoba, claims that the dish has enriched the local economy to the tune of ¥44 billion since 2001. In the three months after Atsugi in Kanagawa Prefecture won the 2008 GP, the town reaped ¥3 billion from people who came to eat its prize-winning Shirokoro horumon (stewed guts). Kofu, the capital of Yamanashi Prefecture, saw the number of its visitors increase fourfold in the year since the city won the GP in 2010.

The B-kyū movement has been ascendant for years — the Grand Prix was launched in 2006 — and is being hailed as one of the few successful schemes for revitalizing rural and ex-urban areas, though "scheme" may not be the right word. B-kyū sprung up organically, without help from a coordinating entity. The various related trademarks are held by the committee that puts on the Grand Prix, but this organ simply filled a centralized public relations need that had grown large by the mid-2000s as more and more local governments endeavored to take advantage of the general public's interest in regional home cooking.

To anyone who watches Japanese TV at all, the B-kyū boom is hardly surprising. So many variety shows incorporate the preparation and eating of food that the Western genre known as "cooking shows" has no meaning here. More significantly, travel shows are often centered on seeking out exceptional dishes, and while regional cuisines have been around as long as there have been regions, Japanese TV has standardized the promotion of local foods with a production style built around the money shot of a celebrity taking that first mouthful, pondering its quality and then erupting in ecstatic praise over the amazing flavor.

Everybody knows the drill, which is why nobody is impressed any more. After decades of watching the same reaction repeated over and over, viewers invariably become jaded. They know travel shows are inexpensive to produce because small businesses offer free food and accommodations in exchange for exposure, and so the on-air talent has no choice but to effuse over everything they put in their mouths. It's not that the public doesn't believe the food is delicious; only that the producers' priorities have little to do with honesty.

B-kyū could partly be seen as backlash: viewers telling the media what's good rather than the other way around. The very name, "B-kyū," rejects the notion that people want something approved by someone whose authority on the matter is arbitrary and, by implication, snobbish. It's a movement that belongs to everyone. Now there are a number of programs that explore regional peculiarities on the locals' terms, most notably Nihon TV's "Kenmin Show." But they followed the trend, they didn't spark it.

It's this anti-elitism that people find gratifying and which may disqualify B-kyū for UNESCO's imprimatur for the same reason kaiseki would have been rejected. By definition, regional cooking, especially that which was designed to be cheap and resourceful (many B-kyū dishes started out as something to sell at local festivals), can only be representative of a small group. But that's what makes Japanese food great, if not exactly unique. Ingredients and cooking methods vary widely, but are less important than the enthusiasm of the consumer. As Japanese people are always quick to tell you, they'll eat anything as long as it tastes good.

Every populist movement needs a mascot, and B-kyū gurume found its own in plus-size comedian Hidehiko Ishizuka. Clad in bovine-print overalls and armed with a bulletproof gullet, the portly "gourmet reporter" has made a career of touring down-home restaurants on such shows as TV Tokyo's "Ganso! Debuya" ("Original! Big Eaters"). His euphoric cry of pleasure — "Maiu!" — has become a national catchphrase.

B Kyu Gurume is the buzzword of Japan these days.
It means cheap local food, served in local restaurants. They have now banded together and make Japan-wide events like this one to sample regional dishes. There is also a prize to be won for the best gourmet dish.

This turned out to be quite an event!

Just the logistics were impressive. The roads on one-way trafic only, frequent buses running from the station and parking lots in the area (some about 6 km further south of the main event area), nearby people selling their front yards for parking for as much as 1000 yen (about 10 dollars) ...
Rows of extra toilets and tank rolleys on many spots to provide extra water.
Electricity generators humming everywhere.
Police patrols and guards everywhere, to make sure the car traffic was smooth around the area.


Blessed with extra warm spring weather, it was really a day to spend there with the family. The beautiful mountains gave the whole colorful space a great feeling of spring and bubbeling life !

The food was actually not really cheap.

For a simple burger with real beaf from nearby Nagi village we payed 400 yen (about 4 dollars !)

and a small sandwich with a cutlet (not even a letuce leaf was added) was as much as 700 yen !

They are expecting the same number!


Sunday morning, 21 of March

We had a terrible storm and got a lot of yellow sand from the Gobi desert.
I hope things will go smooth today !

Despite the hard night, there were again many visitors.
In fact, the newspaper reported

150.000 visitors on two days ! ! !

That is 50.000 more than expected, and all wanted to eat well.

There were three different main grounds
with 54 different offers of regional food:

28 stalls on the Southern Ground,
17 stalls on the Northern Ground
7 stalls on the Hamburger Ground
8 stalls on the local ground

Some people had to wait more than four hours on the second day to reach the front of the waiting line of favorite food stalls.

And fast food is often eaten while standing, tachigui たちぐい (立ち食い), some noodle soup shops have only space to stand in order to be able to handle a large number of clients in a short time, such as the lunch break in the city, where thousands come out of their office to grab some food.
This is a topic in itself, for example trucks with a load full of obento selling just for the lunch-hour time.


Some famous stores have visitors stand in line waiting for their turn, gyooretsu no dekiru mise/meibutsu 行列のできる店.

the Peach Boy
is the hero of Okayama city. The main street is even called "Momotaro Road", momotaroo doori 桃太郎通り and an annual festival is held in his honor.

The city of Okayama has now "invented" a hodgepodge named after this famous hero 桃太郎鍋.
CLICK for more photos It started off with a big pot serving visitors of a festival in 2006.
The hodgepodge includes ass the heroes of the story. Momotaro himself is represented by kibi dango, kibidango 黍団子 millet dumplings. The red demon is represented by mochi with red rice, whereas the green demon has yomogi mugwort mochi. The local momotaro jidori 桃太郎地鶏 chicken is used for the soup. Only local vegetables are used. They are cut into the heroes of the story, carrots are cut in little monkey shapes, the white dog is formed from radish. Yellow nira leek of Okayama is also added in great quantity to represent the tail of the pheasant.
It is quite fun to pick them all out of the pot when done. So the family has something to talk about when eating together.

One of the attraction is the dance "uraja うらじゃ", where people paint the faces in all colors and wear fancyful costumes. Groups of many villages take part and often there is a competition for the best costumes and dancing.
My own village Ohaga also has a dance groupe of this kind.

The story of Momotaro may be related to the old believes of the onmyodo 陰陽道 Yin-Yang Worldview. The direction of bad influence, kimon, is in the ushi-tora (bull tiger) direction. So one of the demons Momotaro is fighting has horns and the other wears a tiger skin.

And the Monkey, Dog and Pheasant are animals in the zodiac, in the opposite heavenly direction from the kimon 鬼門 .


The peach itself is seen as an auspicious symbol.
In the shrine Abe Jinja 安部神社 at the kimon related to the imperial palace in Kyoto is a metal peach, where people come to touch it to ward off evil 厄除けの桃 even today.

Momotarō (桃太郎)
CLICK for more photos is a popular hero from Japanese folklore. His name literally means Peach Tarō; as Tarō is a common Japanese boy's name, it is often translated as Peach Boy. Momotarō is also the title of various books, films, and other works that portray the tale of this hero.

The popular Children's song about Momotarō titled Momotarō-san no Uta (Momotarō's Song) was first published in 1911. One version of it is included below with romanization and translation.

In Okayama wird ein reichbestücktes Sushi in einem Teller angerichtet. Auf den Sushi-Reis kommen verschiedene Auflagen, es ist eine Art, die auch „chirashizushi“ genannt wird. Der Segen des Meeres und der Segen der Berge leuchtet in bunten Farben auf dem weißen Reis. Der Regionalfürst von Bizen und Okayama, Ikeda Mitsumasa (1609-1682), erließ damals einen Sparbefehl, nach dem für eine Mahlzeit nur „eine Suppe und ein weitere Speise“ serviert werden durften. Seine schlauen Untertanen umgingen diesen Befehl, indem sie auf einem großen Teller Reis allerlei Fischstücke, Garnelen und andere Meeresfrüchte sowie viele Gemüsesorten der jeweiligen Saison anhäuften. Dieses farbenprächtige Sushi hat sich bis heute erhalten und darf bei keiner Feier oder Festlichkeit fehlen, es wird daher auch „Festtags-Sushi“ (matsurizushi) genannt.

a kind of takikomi gohan with vinegar, to make a sushi. The beginning of the chirashizushi of Okayama. Already prepared in the Kamakura period. At that time, there was a stop-over for ships from Bizen to Fukuoka, where the takasebune ships used this kind of mixed rice as obento. The original word was doburoku meshi どぶろくめし (doburoku is cloudy white sake rice wine). It is also the origin of Bizen barazushi 備前ばらずし.

Fagiano Okayama Football Club is a football club from Okayama, Okayama, Japan. Fagiano currently play in the J. League Division 2, the second-tier professional football league in the country. Fagiano in Italian means "pheasant", and it's a reference to the pheasant that was a companion of local legend character Momotarō. Their mascot Fagi-kun is based on the specific species native to Japan, the Green Pheasant.

It is sold in various preparations, dried, as powder or in hot oil salad dressing. Even Konnyaku is flavored with red chili (konnyaku hime).

Hiruzen Yakisoba 蒜山焼そば fried noodles from Hiruzen
Flavored with miso sauce.
This has become more popular with the B-Kyu Gurmet movement, and even one prizes.
It is an old dish, keeping the tradition of the region. In winter, when snow covered the exit passes fro the highlands, farmers had to make do whith what they could preserve. So each family used some kind of miso pickles and a home-made miso-sauce mix for a "family flavor".
The chicken for this dish come from old hens, which have done their duty laying eggs. It was suggested to use young chicken with softer meat, but that is not the tradition of Hiruzen farmers, so the old ways were revived in this popular noodle dish.

Kasaoka raamen 笠岡ラーメン Kasaoka ramen noodle soup
made only with chicken meat (chikin chaashuu) and chicken soup, since more than 50 years.
After the war, Kasaoka town was surrounded by chicken farms.

kenbiki-yaki, kenbikiyaki ケンビキ焼き, けんびき焼き
Kenbiki, kembiki in local dialect means "to be tired".
In the local dialect, the first of June, rokugatsu ichinichi, rokugatsu hitohi was pronounced rokkahidee ロッカッヒテエー was one whole day in June when the farmers did the planting of rice seedlings. All villagers would stop their other work and be out in the fields, also called shiromidi シロミテ, white day.
On this day, the kenyiki-yaki, prepared in a hooroku ホウロク earthen pan wrapped in leaves of myoga ginger was offered to the local deities (ujigami 氏神様、内神様) and later eaten by the whole family.

They were a substitute for poor farmers who could not afford to use mochigome rice in olden times.

From Kibi Chuo Town, Kibi Kogen highlands 吉備高原
kusagina are the leaves from a tree of the verbena officinalis family (kumatsuzura クマツヅラ科), which grows about 3 meters in hight. The leaves are big and eggshaped and have a strong smell. The leaves are dried and eaten as hozonshoku by the hunters of the mountainous area. They are rich in vitamin C and Calcium.
It is now also prepared as a school lunch and sold in packs online.

Speciality in Northern Okayama prefecture, especially prepared for the autumn festival. The salted fish was brought from Tottori during the Edo period and the farmers could only afford to buy it just after the harvest.
In my village, the farmers wifes offer their handmade sabazushi to friends and family.

Kobayashi Issa

In Issa's journal this is the first haiku of Eighth Month, 1816. Earlier that year, the last haiku of Second Month began with the same first two phrases, but ended with "peach blossoms" (momo no hana). Though the kanji for "gourd" is today read as hisago, Issa read it as fukube. Shinji Ogawa notes that a hollowed fukube could be used as a container or bottle.
In this haiku, "the gourd becomes a magic lamp or a bottle where a Genie comes out, in this case, Peach Boy." He adds, "There is a Japanese phrase, hyootan kara koma which means 'a horse from a gourd' or 'an unexpected thing happened'."

Kurashiki  倉敷  is famous for its canals and willow trees. There is a group of elders who go around town with masks and large fans and tap people on the head for good luck.
They walk around as representatives for their friends who are bedridden and can not go out.
