Namie evacuees bag food trophy

NAGOYA – Fried noodles served up by nuclear evacuees of the town of Namie, Fukushima Prefecture, won first prize in this year’s low-price popular food contest B-1 Grand Prix held in the city of Toyokawa, Aichi Prefecture, over the weekend.

The Namie team, whose members had to flee their town at the March 2011 start of the meltdown crisis at Tokyo Electric Power Co.’s Fukushima No. 1 nuclear plant, served Namie “yakisoba” fried noodles in the contest, the eighth to be held so far.
It was the first time for Namie residents to win the competition, although the group has taken part in the event three times before.

Second prize went to a group representing the city of Towada in Aomori Prefecture. The group, which served Towada “barayaki” — beef flanks grilled on a hot plate with onions seasoned with a spicy-sweet soy-based sauce — is comprised of volunteers and was established in 2008 to help revitalize the city.

Third prize, meanwhile, went to a group from the city of Katsuura in Chiba Prefecture that served “tan tan men” spicy Chinese-style boiled noodles.

“Mamebu-jiru” soup was a local specialty offered by people from Kuji, in Iwate Prefecture.
The offering enabled the city, badly damaged by the March 11, 201 tsunami, to place fifth.

Namie yakisoba owes its flavor to the thick pan-fried noodles resembling “udon,” a type of thick wheat noodle, served with pork and bean sprouts doused in Worcestershire sauce.

“Everyone, what happens to Fukushima is not always bad,” said Sadayuki Yashima, giving cheer to people in Fukushima, while the 45-year-old leader of the group from Namie received the chopstick-shaped trophy.

A record number of 64 groups participated in this year’s contest.

B-1 Grand Prix is "selling each town" instead of only providing foods.
The exhibitors is not the restaurant cooks, but they are the groups developing the some projects at each town. Members of groups will not only provide some local foods but also be walking with each original character, based on their historic, playing some instrument music and playing a part.

Curry is a dish of India, but in Japan it has taken on a life of its own.

Curry (カレー, karē) is one of the most popular dishes in Japan. It is commonly served in three main forms: curry rice (カレーライス, karē raisu), karē udon (thick noodles) and karē-pan (bread. Curry rice is most commonly referred to simply as 'curry' (カレー, karē).

A wide variety of vegetables and meats are used to make Japanese curry. The basic vegetables are onions, carrots, and potatoes. For the meat, beef, pork, chicken and sometimes duck are the most popular, in order of decreasing popularity. Katsu-karē is a breaded deep-fried pork cutlet with curry sauce.

Curry was introduced to Japan during the Meiji era (1869 - 1913),
at a time when India was under the administration of the British. The dish became popular and available for purchase in supermarkets and restaurants in the late 1960s. It has been adapted since its introduction to Japan, and is so widely consumed that it can be called a national dish.
As curry rice was introduced to Japan via English cuisine, it was originally considered to be Western cuisine.

original curry (オリジナルカレー, orijinaru karē), Japanese style

Curry sauce (カレーソース, karē sōsu) is served on top of cooked rice to make curry rice. Curry sauce is made by frying together curry powder, flour and oil, along with other ingredients, to make roux (ルー, rū); the roux is then added to stewed meat and vegetables, and then simmered until thickened. Adding potatoes to curry sauce was introduced by William S. Clark of the Sapporo Agricultural College, due to rice shortages at the time.

While curry roux and curry sauce are strictly speaking not the same, many people do not distinguish between the two, and it is common for people to ask for 'extra roux' (ルー増し, rū mashi) when ordering extra curry sauce in restaurants.

Instant curry roux カレールー was first sold in powder form by House Foods in 1926, and in block form by S&B Foods in 1956.

Vacuum-sealed curry sauce, prepared by heating the pouch in hot water or the microwave, is also popular.

Explanation


The Japanese word NEGI 葱 (ねぎ) includes a lot of varieties, according to its age and place of growth.

The onion is a round negi, tamanegi 玉葱 (たまねぎ)

Here we are concerned with the "long onion",

It has been out of use for many years but now revived by some diligent farmers. It is a special leek with 10 to 20 stems growing from the same stem. The white stems are about 20 cm long, and the soft green leaves are also eaten. It tasts rather sweet when cut fresh and put on a grill, the whole white and green plant.

The town uses this leek to revitaize the region,
"negiwai no machi" 「ぶらり岩槻観光『ねぎわい』マップ」.


They have a map with stores that sell special leek dishes.
Raw with white miso paste, negi nuta.
Mixed in yakisoba fried noodles and even baked into pie or a mix of leek and miso as a paste inside a bread bun.

They are especially sweet and juicy and welcomed by gourmet cooks. Now mostly from Kita-Senju. It is auctioned off in special auctions, the only vegetable to have this honor in Japan.
You can eat them as a simple tempura without any condiments.

The short and fat white root makes the Simonita Negi look more like a leek than a scallion. The Shimonita Negi is popular throughout Japan, but particularly so in its place of origin, Shimonita Town, famous for its produce.

They are very thick and large and all parts can be eaten. The white part is about two fingers wide, the green leaves up to 50 cm long and the part in the ground swollen where the thin roots sprout. The seeds are taken every year to produce new plants of the same high quality, supervized by a group of farmers.
Local people even put them on pizza.

Leeks (Allium ampeloprasum var. porrum (L.) or synonym Allium porrum) are just one of many vegetables in the onion family. Cultivated from wild leek , it is closely related to elephant garlic and Kurrat (from Egypt) (all these are Allium ampeloprasum subspecies) and further related to chives and ramsons.

Leeks are commonly called (der) Lauch or (die) Porree in German and are tall, thick plants with straight, alternating leaves and non-bulbing roots. Farmers bury the sets (little plants) deep to blanch as much of the stalk as possible, but all parts of the leek are edible. They are usually about 1 inch in diameter, but can be eaten smaller or larger. They taste like a mild onion and garlic mix. They often have a sharp bite when raw, but are sweet when cooked.

Leeks have been used in Germany since the Middle Ages. Before that, people used wild garlic called ramsons or "Bärlauch" (Allium ursinum) for food and medicinal purposes for at least 5000 years. Ramsons grow wild and is gathered in May. Germans cook a cream soup (roux base) with it or use it in soft cheese spreads.

Leeks are famous for vichyssoise, a French potato leek soup and are always in a Suppengrün bundle, to be used as an herb. They are used in place of onions in many dishes and casseroles.

Another leek relative shows up in North America and is known as ramps, ramson or wild leek (Allium tricoccum). It is used in Appalachian cuisine and in Pennsylvania, where festivals are held each year in its honor.

Clean leeks by slitting them down the side and rinsing the dirt out of the rings under running water. Trim ends and slice or chop. Try cooking leeks in fat (or bacon grease) until soft and adding cream, salt and pepper for a side vegetable.

Explanation

yaku 焼く ... can have many translations in English and is used for a variety of dishes.

Let us look at some famous yaku preparations.
Usually they are called xyz-yaki 焼き.


To do YAKU you can use a net over the grill or barbeque, a frying pan, frypan, or skillet, an oven toaster or an oven.

They come in a style from Osaka and one from Hiroshima. Often yakisoba are added to it to give it more volume. Served with a lot of Aonori and mayonaise. A fried egg is also served with it.
Osaka is sprinkled with red vinegar-ginger (benishooga) and lots of katsuobushi flakes.

fried (or grilled) on an iron plate or pan
In restaurants, the cooking can be done on a large iron plate (teppan) on the counter or on indivitual hot plates for a group of guests for socializing while eating.
The fried ingredients, mostly meat, fish and vegetables, are dipped in a special sauce, often the secret of a restaurant.
Meat can be marinated before grilling.
Steak, shrimp, okonomiyaki, yakisoba, and monjayaki are prepared on these iron plates.

The originator of the teppanyaki-style steakhouse is the Japanese restaurant chain Misono, which introduced the concept of cooking Western-influenced food on a teppan in Kobe in 1945. They soon found that the cuisine was more popular with foreigners than with the Japanese, who enjoyed both watching the skilled maneuvers of the chefs preparing the food as well as the cuisine, somewhat more familiar than more traditional Japanese dishes. As the restaurants became popular at tourist spots with non-Japanese, the chain increased the performance aspect of the chef's preparation, such as stacking round slices of onion in the shape of Mount Fuji and lighting alcohol (usually sake) contained within on fire, producing a flaming onion volcano.

In Japan, many teppanyaki restaurants feature Kobe beef. Side dishes of mung bean sprouts, zucchini (even though zucchini is not a popular vegetable in Japan and rarely found in the market), garlic chips or fried rice usually accompany the meal. Some restaurants provide sauces in which to dip the food. However, in Japan, only soy sauce is typically offered.

Yuan Yaki. Grilled fish or chicken a la teriyaki, first marinated in a mixture of light soysauce, sake and mirin, with lots of yuzu juice.
This marinade was first used by the gourmet, monk and tea master Kitamura Yuan (Yuuan) 北村祐庵 / 堅田幽庵(1648 - 1719) of the Edo period.
His name was also 道遂。幽安・幽庵・柚庵. He was the son of a rich family in Katata, Otsu, Shiga prefecture. He was one of the four great disciples of Sen Sotan 千 宗旦 (Sen Sootan) and learned also from Fujimura Yoken 藤村庸軒 (Fujimura Yooken). He also designed the famous garden Isomeshi Teien 居初氏庭園 in Otsu, Isomeshi's Garden .
