- Regionale landwirtschaftliche Produkte aus Tohoku -

Obwohl die Region Tohoku zu großen Teilen aus Gebirgen besteht, spielt sie eine wichtige Rolle für die Lebensmittelversorgung Japans. Alle Flächen, die sich in dem harten Klima für den Anbau von landwirtschaftlichen Erzeugnissen eignen, werden entsprechend genutzt. So ist Tohoku bekannt für den Anbau von Äpfeln, Reis, Trauben, Pfirsichen, Melonen, Mais und auch Tabak. Auch Milchprodukte werden hier produziert und in ganz Japan vertrieben.

Nur zwölf Kilometer nordwestlich der Stadt Morioka liegt ein landwirtschaftliches Unternehmen, das in ganz Japan bekannt ist. Die großen Weiden dieser Farm bieten mit dem Berg Iwate (2041 m) als Hintergrund ein Bild ländlichen Friedens und natürlicher Landwirtschaft. Die Erfolgsgeschichte begann im Jahr 1891, als Inoue Masaru hier mit der Zucht von Holstein-, Ayrshire- und Brown-Swiss-Kühen begann. Seinem Beispiel folgten bald zwei weitere Landwirte aus der Gegend. Mit Beginn des 20. Jahrhundert befassten sich die Bauern auch mit der Pferdezucht, lange bevor in den frühen 1960er-Jahren die Hühnerzucht folgte. Einen Namen für ihr gemeinsames Unternehmen hatten die drei Bauern bereits 1938 gefunden: KOIWAI; er besteht aus den Initialen der drei Gründer.
Neun der erhaltenen historischen Gebäude wurden Ende der 1960er-Jahre zu wichtigen nationalen Kulturdenkmalen ernannt. Inzwischen werden die Milch- und Eierprodukte dieser Farm in allen Supermärkten Japans verkauft.

Die Halbinsel Tsugaru und die Ebenen vor dem Berg Iwaki (1625 m) sind den Apfelplantagen gewidmet. Die jungen Äpfel werden liebevoll in zwei Papiertaschen eingetütet, um sie vor Insekten zu schützen. Kurz vor der Ernte wird zunächst die äußere Tasche, zwei Wochen später die innere abgenommen, damit der Apfel kurz vor dem Ernten noch etwas natürliches Sonnenlicht bekommt. Der größte Feind der Apfelbauern sind die Herbststürme, oft "Apfel-Taifun" genannt, gegen die die Bauern jedoch machtlos sind.

Durch einen Film erlangten die Äpfel von Tsugaru direkt nach dem Zweiten Weltkrieg besondere Berühmtheit. Die damals 14-jährige Misora Hibari (1937–1989) spielte hierin »Das Mädchen von der Apfelplantage« und brachte durch ihre kecken Lieder über die Äpfel von Tsugaru etwas Licht und Freude in die triste Nachkriegszeit.

In dem trockengelegten Gebiet des ehemaligen Sees Hachirogata, das mit vier Metern unter dem Meeresspiegel die tiefstgelegene Gegend Japans ist, werden Reis, Melonen, Sojabohnen, Weizen und Trauben angebaut. Das Gebiet liegt nur 20 km nördlich der Stadt Akita und viele Stadtbewohner fahren am Wochenende hierher, um einen Ausflug ins Grüne mit dem Einkauf von frischem Obst und Gemüse zu verknüpfen.

Animal Tales, issued 10 January 2006, was the first set of commemorative stamps issued by the Royal Mail in Great Britain in 2006.

The Very Hungry Caterpillar
is a children's picture book designed, illustrated and written by Eric Carle, first published by the World Publishing Company in 1969, later published by Penguin Putnam.

The book follows a caterpillar as it eats its way through a wide variety of foodstuffs before pupating and emerging as a butterfly. The winner of many children's literature awards and a major graphic design award, it has sold 30 million copies worldwide.

It features distinctive collage illustrations (Carle's third book, and a new style at the time), 'eaten' holes in the pages and simple text with educational themes – counting, the days of the week, foods, and a butterfly's life stages. There have been a large number of related books and other products, including educational tools, created in connection to the book.

Whilst the caterpillar's diet is fictional, rather than scientifically accurate, The Very Hungry Caterpillar introduces concepts of Lepidoptera life stages where transformations take place including the ultimate metamorphosis from 'hungry caterpillar' to 'beautiful butterfly', and the book has been endorsed by the Royal Entomological Society.
It has been described as "one of the greatest childhood classics of all time."

Synopsis
The book starts with an egg on a leaf, in the light of the moon.
The sun comes up and a tiny caterpillar emerges and looks for food.
On consecutive days, the caterpillar eats through a single red apple, two (green) pears, three (purple) plums, four strawberries, and five oranges, which takes us from Monday to Friday.
Saturday: the caterpillar eats its way through many different foods: chocolate cake, ice-cream, a pickle, Swiss cheese, salami, a lollipop, cherry pie, a sausage, a cupcake, and a slice of watermelon. The caterpillar gets stomach ache as a result of eating all this food.
Sunday: the caterpillar eats through a single leaf, which makes the caterpillar feel better.
The now big caterpillar forms a cocoon (since the titular character is not a moth larva, this is poetic license).
On the final pages the caterpillar is now a 'beautiful' butterfly.

a kind of blue algae that grows in fresh water 水生藍藻
It is now a natural treasure 天然記念物指定.


Along the upper regions of the river Koganegawa, along about 500 meters, water is divided into small shallow rivulets, where the alga grow on especially planted grass. They need a lot of mineral in the water and a temperature of about 18 - 20 degrees centigrade.
Most of it floats in the water as small black pieces, until it catches some grass to grow larger. It is rather wobbely and jelly-like when harvested.

It was allowed to be harvested by the lord of Akatsuki Domain, who gave a written report to a family in Asakura, which still harvests and produces it in the traditional way by hand. So it has a tradition of more than 250 years.


About one kilo of the mashed laver is spread on earthen tiles, about 1 cm thick, and let dry naturally. After that the rather flat pieces are now put on wooden planks, smothered with a bit of water into perfect shape (about A4 sixe plates) and let dry again.




Before eating, it can be put into water to gain back its thickness.

Put in soup or as tsukudani, it is a welcome source of minerals.

The nori have been found near the temple Suizen-Ji 水前寺 at lake Ezuko 江津湖.
These sweet-water nori are the first plants to bring oxygen to the earth in early times.

They are black when swimming in the water and contain two color components

On his trip to Higo Kumamoto, where he was eager to savor the nori, which were already famous in his days.
Soup is usually served at the end of a meal, or sometimes eaten during a banquet. Basho found it amazing to get the soup first when he wrote his haiku about it.

This is a new, or rather old, type of the satsuma sweet potatoes.

It has been grown in Tanegashima for many years, trying to breed it back to the origins of this kind of potato.
It is rather round, not long as the satsuma potato. And its color when boiled is pure gold, just so delicious !



When you roast it in the oven, the sweet juices, like honey, squeeze out of the peel.

Tanegashima is one of the oldest growing areas of this potato. Its sugar content is about two times more than that of normal satsuma potatoes. So it is a natural "sweet desert".

You can eat it just like that, baked in the microwave or in the oven.

It is also used for other sweets, like pound cake or cookies.

The whole town uses this mascot for its promotion.

Hot soup, hot noodles, hot fried rice, even sweets with six degrees of hot pepper are offered !

During a life reportage everyone was coughing because of the pepper dust in the restaurant. The cook was wearing a mask in another restaurant., because he could not bear the biting fumes from the various pepper powders he was mixing for his soup.
In another restaurant, the cook and his helper were coughing, and all guests coughed and had tears in the eyes ... quite a remarkable reportage.

The reporter could not speak any more for a while, obviously in pain ...



Yet this hot pepper keeps the shopping mall alive !

B Kyu Gurume is the buzzword of Japan these days.
It means cheap local food, served in local restaurants. They have now banded together and make Japan-wide events like this one to sample regional dishes. There is also a prize to be won for the best gourmet dish.

This turned out to be quite an event!

Just the logistics were impressive. The roads on one-way trafic only, frequent buses running from the station and parking lots in the area (some about 6 km further south of the main event area), nearby people selling their front yards for parking for as much as 1000 yen (about 10 dollars) ...
Rows of extra toilets and tank rolleys on many spots to provide extra water.
Electricity generators humming everywhere.
Police patrols and guards everywhere, to make sure the car traffic was smooth around the area.


Blessed with extra warm spring weather, it was really a day to spend there with the family. The beautiful mountains gave the whole colorful space a great feeling of spring and bubbeling life !

The food was actually not really cheap.

For a simple burger with real beaf from nearby Nagi village we payed 400 yen (about 4 dollars !)

and a small sandwich with a cutlet (not even a letuce leaf was added) was as much as 700 yen !

All the smells mixed in the area, smiling people, crying babies, happy families,
and then to decide what to sample next ...


A friend called in the evening telling us there were more than

65.000 people attending today !


Whow, and how about tomorrow ?
They are expecting the same number!


Sunday morning, 21 of March

We had a terrible storm and got a lot of yellow sand from the Gobi desert.
I hope things will go smooth today !

Despite the hard night, there were again many visitors.
In fact, the newspaper reported

150.000 visitors on two days ! ! !

That is 50.000 more than expected, and all wanted to eat well.

There were three different main grounds
with 54 different offers of regional food:

28 stalls on the Southern Ground,
17 stalls on the Northern Ground
7 stalls on the Hamburger Ground
8 stalls on the local ground

Some people had to wait more than four hours on the second day to reach the front of the waiting line of favorite food stalls.

kako no jabujabu 水夫のじゃぶじゃぶ sailor's jabu-jabu

kako is an old word meaning sailor, seaman.
ka is from kaji 梶(かじ), oar, stirring oar
ko is from kogu こぐ【漕ぐ】 to row a boat

This is a local dish from the port town of Ushimado 牛窓, Okayama prefecture.


The minced meat of fish together with its bones, especially some local types of flatfish, is used.
geta no kuzushi ゲタのくずし(骨ごとのミンチ)
Radish, carrots, konnyaku and other ingredients like sugar, soy sauce, a sip of ricewine are added to a kind of thick soup which is poored over cooked rice.
(a kind of bukkake gohan ぶっかけご飯).
The minced fish meat is first fried with a bit of oil and later some spring chrysanthemums (shungiku) are added for a green touch and view. All is then flavored with a lot of wasabi, green horseradish.

The seamen had to eat this very fast inbetween work, so they slurped it, making the sound jabu jabu jabu.


In a try to revive this food and do something about the dwindling population of Ushimado, this dish is now cooked for the monthly meeting at the beach (Ushimado Date 牛窓デート) where people come together on the beach, sing and maybe dance and enjoy local dishes.
It is hoped this will also attract tourists.

I saw this on local TV last night. Everybody seemed to have a good time singing and eating on the beach. It was quite a warm day for February.

Kagoshima (Satsuma)




Kagoshima Prefecture (鹿児島県, Kagoshima-ken)
is a prefecture of Japan located on the island of Kyūshū. The capital is the city of Kagoshima.
Kagoshima Prefecture is located at the southwest tip of Kyūshū and includes a chain of islands stretching further to the southwest for a few hundred kilometers. The most important group is the Amami Islands.
It has a bay called Kagoshima Bay (Kinkowan).
The prefecture boasts a chain of active and dormant volcanoes, including the great Sakurajima, which towers out of the Kagoshima bay opposite Kagoshima city.

Kagoshima Prefecture corresponds to the ancient Japanese provinces Ōsumi and Satsuma 薩摩  , including the northern part of the Ryukyu Islands.

The prefecture has strong agricultural roots, which are reflected in its most well-known exports: green tea, sweet potato, radish, Pongee rice, Satsuma pottery and Berkshire pork ("kurobuta"). Kagoshima prefecture's production of bonito flakes is second only to that of Shizuoka. In addition it produces Japan's largest volume of unagi eels.

It used to be grown widely, but with cheaper imports, its fields were abandoned.
Now some areas grow it back in memory of the good old times, prepare sugar like their grandfathers did and make sweets for the local children to remember.

Eaten for the Boy's festival. akumochi.
Glutinous rice is wrapped in bamboo leaves and simmered for 3 to 4 hours in alkaline lye. Thus they can be kept for a long time when done. The army of Satsuma used these when going to war. It tasts rather alkaline. It is cut in pieces and covered with sugar and kinako soy powder before eating.

Pounded white fish meat and flour is mixed to prepare a compact paste that is solidified through frying. Sometimes tofu is added into the mix.
Many ingredients can be added for extra flavor, for example vegetabels.
This food originated in Vietnam and came to Okinawa brought by local fishermen. From there, it found its way to Kagoshima (former Satsuma) and then spread all over Japan.

There is a small red sardine, about 15 cm long, locally called "Kintaro キンタロウ" because of its color, that is caught in the trawling nets in Hagi and Shimonoseki and a few other ports along Western Japan. It is not usually sold in the fish stores of Japan, only regionally.

In English, it is called ゴートフィッシュ "Goatfish", in China 羊魚.

Its sweet red meat tasts good as tempura or grilled with salt.
To prepare a sashimi is bothersome, but makes for a very tasty snack.



It is also dried as it is, maruboshi 金太郎丸干, and sold as a local souvenier in Hagi.

The town of Hagi 萩 is lately trying to promote more dishes with this fish to make it a specialtiy of the city.

Kintaroo ame 金太郎飴 candy named Kintaro

Kintaro ame (candy) has been made since the middle of the Edo period, by layering different colored pieces of candy into a cylindrical face, pull it long to a stick and cut it in small pieces. Other patterns can be included too. Cocoa and caramel are used to color the pieces.
It used to be sold on the special festival days of local shrines and temples and kids enjoyed the differend faces coming out of each cut.



The original store which made this sweet is in the Daitoo ward in Tokyo, 金太郎飴本店.

Most pumpkins are grown in Hokkaido.

In some areas of Japan, it is cutstom to eat pumpkin dishes at the winter solstice. They are simmered with sweet potato starch and sugar.
Some types are very sweet and are used for deserts, cakes and cookies.

i feel sure that 'pumpkin' is one of our international fall kigo. or 'squash'.

here in america, it is a custom to have a 'pumpkin patch'. a farmer will grow and sell pumpkins in late october. or sometimes a church youth group will sell pumpkins on the church lawn.

families will go to the pumpkin patch select a pumpkin for halloween carving into a jack-o-lantern.

here is a haiku of mine that recently came in first in the 'haiku party' featuring the kigo 'pumpkin' at the journal, south by southwest.

Nagashi somen, 流しそうめん a typical summer food to enjoy outside. Small bundles of somen noodles are send down a 'half-pipe' (usually made of bamboo) flowing with cold water from a nearby clean brook. You pick them up as they flow past and dip them into a small bowl with soy sauce and some herbs and spices for extra flavoring. The last bundle is usually colored, mostly pink.
This is a treat to enjoy with your kids.

Sōmen (素麺)
are very thin, white Japanese noodles made of wheat flour. The noodles are usually served cold and are less than 1.3 mm in diameter. The distinction between sōmen and the next thicker wheat noodles hiyamugi and even thicker Japanese wheat noodles udon is that sōmen is stretched while hiyamugi and udon are cut.

Sōmen are usually served cold with a light flavored dipping sauce or tsuyu. The tsuyu is usually a katsuobushi-based sauce that can be flavored with Welsh onion, ginger, or myoga. In the summer, sōmen chilled with ice is a popular meal to help stay cool.

The process of preparing somen involves kneading a dough of wheat flour and salted water and then twist-pulling the dough to form rather thin noodles. Though made differently from soba and udon, in which the rolled-out dough is cut into strips, water also plays an important role in making somen. Somen dough, which is pulled until it becomes almost as thin as silk thread, must have a sufficiently stretchy consistency as well as a pure white color, neither of which can be without water of excellent quality. Tatsuno City, in Hyogo Prefecture, boasts Japan's largest production of somen. The area's Ibo-no-ito (Threads from Ibo) somen uses water from the Ibo River. Low in iron and calcium, this water prevents the wheat flour from oxidizing, maintaining the noodle's exceptional whiteness.
